Ritz Carlton Perth’s all-day dining and lounge offering is a departure from the warm tones of the hotel’s Interior Design. Soft curves and blue tones speak to Perth’s beach culture while gold highlights and Versailles inspired parquetry lend a European edge. It is a deliberate play to attract external patronage and compete with other food and beverage options around the Quay. A entry fireplace, and feature hot kitchen with a wood fire, lend the signature name to the restaurant. Continental breakfast is available from a fresh produce ‘harvest’ table which transforms into a mise en place station for lunch and dinner service. Beverages are served from a dispensing bar and lounge bar at opposite ends of the fitout, elevating the traditional lobby bar into a much more private and luxurious lounge bar akin to the great hotel bars of Europe. Cottee Parker collaborated with the hotel’s appointed Hong Kong based F+B designer, AND Associates, to carry their concept design through development and delivery phases. Cottee Parker also lead the design and delivery of all back-of-house food service areas including food delivery areas, room service kitchen, production and banquet kitchens, and commissary.
